- Flat leaf parsley
- Beef mince
- Mozzarella cheese
- Canned pealed tomatoes
- Tomatoe sauce
- White mushrooms
- Yellow onions
- Black pepper
- Extra virgin olive oil
- Italian seasoning
- Virgin coconut oil
Wash fresh produce 😉
Preheat over to 200c, Slice zucchini long ways and scrap out the middle
Rub zucchini with olive oil and season with salt and pepper, place in oven for 20 minutes
Heat pan over medium heat and place tbsp of olive oil in it
Prep vegies and seperate. Dice tomatoes, onions and mushrooms and mince garloc
Place onion, mushrooms, garlic into pan stirring frequently till soft.
Add mince and cook till browned.
Add tomatoes, canned tomatoes, tomatoe sauce, salt, pepper and Italian seasoning to pan.
Scoop stuffing into zucchinis and sprinkle mozzarella cheese on top
Place in oven for further 5 mins
Serve and season with parsley
